CANCEAUX SAUCE from CAPTAIN MOWATT'S.. Coming out of Portland Main is CAPTAIN MOWATT'S. This is my first hot sauce review from them and hopefully there will be more to come. This sauce is fantastic! It is sweet without being too much, with four types of red chile peppers. ( I'm getting Thai, red Jalapeño, red habanero and cayenne) I may be wrong, but thats what I'm tasting, and the mixture is spot on delicious! The addition of garlic is way over the top, but that being said, it's not overly done. The garlic flavor is bright and adds so much to it's wonderful full flavor. The addition of sugar is a perfect match to it's over all flavor. Here is something I've never had in a hot sauce, Main Seaweed. The flavor of the seaweed is not at all what I expected, it adds a wonderful salty brine flavor without bringing in a fishy taste. Once again the addition is a perfect match to its over all flavor. This sauce is amazing, the more I use it the more I love it. Its fresh and full flavored to bring out the best of any dish you add it too. I have to agree with CAPTAIN MOWATT'S when they say its the Swiss army knife of sauces. I don't usually copy what their website says, but they are spot on about what this sauce can be used on. "Great on steaks, chicken, seafood and steamed vegetables. Pour some on your nachos, pizza, tacos, mac and cheese or your favorite sandwich". Mix with cream cheese to create the best dip you've ever had. I also used it on cottage cheese and it was delicious, but I'm really looking forward to some hot wings. I love this sauce, I'm sure you will too.
