The HGSC story starts in rural northern California where I grew up in the coastal town of Eureka. It's a relatively small town where the primary industries were forestry, fishing, and tourism that touted the exquisite beauty of the coast redwoods that are indigenous to that part of the country.
Mom was a teacher's aide in the Eureka City Schools for 24 years. Dad was the city gardener at Sequoia Park Garden and Zoo for 38 years. My interests in music and movies were fueled by wonderful educators in the public schools and at Humboldt State University. I also received a weekly dose of film criticism from Roger Ebert and Gene Siskel on the local PBS station. Additionally, good food was a staple in our household with most meals made from scratch by my parents, with some help from my sister and me, and where many ingredients were culled from our own garden! It was during these formative years that I was also introduced to spicy dishes from some of the wonderful Mexican restaurants in our community.

SARABANDE from HOT GRAHAM SAUCE.. This sauce will make your mouth pucker from the vinegar, cranberries, ginger root, tequila and lime juice. Then you will get the earthy flavor of the garlic, shallots and Garam Masala spices, to round out the flavor profile you will get a slight sweetness with a little tart from the addition of granny smith apples and the smooth silky texture from the addition of olive oil, with the flavor and heat from jalapeño peppers. CONCERTO from HOT GRAHAM SAUCE.. What an amazing pop of both flavor and heat! A nice splash of Apple cider vinegar is joined by beets, onion, Habanero peppers, a nice pop of citrus coming from the addition of lemon juice, green onions, a pinch of salt and a nice freshness added by the addition of cilantro. The consistency is smooth from the addition of olive oil with nice little chunks of flavor from the rest of the ingredients. What an amazing flavor ride for your tastebuds. Use on all types of food to up the flavor and add a nice amount of heat. This sauce will go with anything, keep this right on your table and be sure to have more then one bottle on hand at all times. Fantastic job the flavor is so unique and delicious I could drink it. I love just using it on chips like a salsa.

THE WARMUP from HOT GRAHAM SAUCE.. This is a full flavored and bold sauce that is vinegar forward. The flavor profile is a mix of sweet roasted pineapple, Jalapeño peppers with a hint of garlic, onion and ginger. The addition of cilantro brings a fresh ingredients taste that definitely adds to it flavor in a bold way. This is an amazing sauce to keep right on your table because of its wide range of use. From pizza to chicken, breakfast to diner, this sauce will be used often and on a lot of different foods.

TOCCATA from HOT GRAHAM SAUCE.. This sauce has a totally different flavor from any sauce I'ver ever had. Even thought the ingredients are similar to other hot sauces, the way they are used in this sauce brings you something totally different. The sun-dried tomatoes are the first thing you taste followed by red wine vinegar, red bell pepper and a nice punch of garlic. The addition of sweet vermouth gives this sauce a very high end gourmet flavor, (something like you would find in a fine dinning Italian restaurant) Then right at the end you will get a hint of fresh parsley that is added in perfectly. The heat is provided by the Carolina Reaper, that adds both heat and a nice pepper flavor, but not too much to over power the flavor of this sauce. Great on any type of foods. But this would be amazing added to marinara, pizza sauce, spaghetti sauce or any tomato based sauce or dish. You can even use this as a ketchup substitute for burgers, hot dogs or on meatloaf. This would also be great on omelets or over easy eggs.
