Restaurateur/Chef/Consultant/CuratorMy wife Liz and I co-owned and operated the legendary New World Home Cooking Company in Woodstock/Saugerties NY from 1993-2018. We were a beloved community hub and gathering restaurant for the Hudson Valley. We were also the site of hundreds of wine, beer and spirits dinners, fundraisers, theme dinners ranging for local wild game events to vegan tasting nights, and of course amazing Holiday meals that became family tradition for hundreds.
We had a great run of 25 years and have had more than 700 employees work in the business. Thanks to them all, we have a wonderful legacy to remember.
In 2009, I contracted with Scott Meyer and Annette Nanes to open New World Bistro Bar in Albany, NY. I worked to create an Urban version of New World Home Cooking with the same community connections, passion and love. I designed the training program where our Mantra is "Everyone seeks happiness, we create it". I also curated the menu and food events as well and trained, cooked, inspired and oversaw one of the best spots in the Capital Region, for 11 years
I also own Flavor Maker Spices. My personally designed spice mixes that I use in my Restaurant Kitchens are now available for home cooks!
Plus Ric has been on many television shows we all love.

PURPLE HAZE from CHEF RIC ORLANDO.. This is a bright full flavored hot sauce that will excite your taste buds with an amazing flavors of sweet pineapple juice, cabbage, apple cider vinegar, brown sugar, onion, lemon juice, habanero peppers and spices. I've never tasted a sauce quite like this, its sweet and fruity from the pineapple juice and cabbage. The cabbage is not bitter at all and lends a wonderful texture to this sauce. Then you get awesome flavor and heat coming from the habanero peppers. There is a slight onion taste that blends into the flavor of this sauce with just enough ginger and thyme to add a subtle little enhancement that works so well to round out its flavor. The addition of lemon juice gives this sauce an awesome citrus tone that softens the acid of the apple cider vinegar. This sauce is amazing on fish, shrimp, red meat, pork, pulled pork sandwich, fish or shrimp tacos, used as a marinade or a dipping sauce.

DIRTY BLONDE from CHEF RIC ORLANDO.. I am just excited about this sauce as I am about PURPLE HAZE. It starts out with honey and pineapple flavor with a black pepper kick. The lime, orange and grapefruit juice adds a nice citrus undertone that works perfectly with the apple cider vinegar without being too tart or bring too much acid to this sauce. The addition of turmeric and allspice rounds out the flavor of this sauce to make it a one of a kind sauce you could use on all types of food. The habanero peppers lends both heat and flavor that all us hot sauce aficionados love to taste. This sauce would make an amazing marinade, in your cooking with sea food like shrimp, crab or fish, poured over your pulled pork sandwich, used on fries, pizza, on fish or shrimp tacos and so so much more. This sauce could be keep right on your table because of the wide diversity of its flavor.
